I’ve tried just about every GF flour I can get my hands on in this town. I like Cup4Cup, which you can sometimes get at Fred Meyer, best, but dang is it expensive! My go-to flour is King Arthur Multi-Purpose.
So Sunday morning, everybody was hungry for breakfast and I got down the flour thinking I was going to make pancakes, but there was a recipe for popovers on the back of the box. I tried it. It is GREAT.
We happened to have some salmonberry jam from my friend Gretchen who lives on Yukon Island outside of Homer and some fancy soft cheese. Totally awesome combo.
Here is the recipe, adapted from the back of the King Arthur Flour box:
Makes 12 popovers.
4 large eggs
2 tbls melted butter + plus some for buttering muffin tin
1 1/4 c lukewarm whole milk
1 c multi-purpose GF flour
1/4 tsp xanthan gum
3/4 tsp salt
Preheat oven to 400 degrees. Generously grease a 12-cup muffin tin. Microwave milk for like 45 seconds, so it’s warmish. Whisk together the eggs, milk and melted butter. Whisk together the flour, xanthan gum and salt. Sift the dry ingredients into the wet ingredients gradually, while stirring with a whisk to make a smooth batter. Pour into the muffin tin, filling each cup about 1/2 full. Bake at 400 for 20 minutes, then turn the oven down to 350 and bake for another 15, until popovers are golden brown and firm to the touch. Let stand 5 minutes. Serve with soft cheese, butter and jam.
